Kokihi is a delicious native succulent also known as sea spinach, that holds its shape in soups and the new shoots are great in salads. Kokihi provides a very good source of Vitamin A, Vitamin C, Riboflavin, Vitamin B6, Calcium, Iron, Magnesium, Copper, and Manganese. Which help to fight against the scurvy disease that lack of Vitamin C.


Raw kokihi is crispy goodness at this time of year as the days are getting longer again its time to transition back to salads again and if it's a hot stew then kokihi goes with that too!
